Carrot Cake Peanut Butter 5 Minute Oatmeal

Carrot Cake Peanut Butter 5 Minute Oatmeal is a creamy dish with the flavours of carrot cake and a subtle hint of peanut butter in every bite. Can easily be made Vegan and Gluten Free.

Ingredients

  • 20 grams oats - use gluten free if you need to 1/4 cup
  • 14 grams raisins 1/8 cup
  • 15 grams chopped mixed nuts 1/8 cup
  • 1 tablespoon light brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground ginger
  • 1 medium sized carrot - grated
  • 180 millilitres milk - cows / almond / coconut / soya all work here 3/4 cup
  • 1/2 tablespoon peanut butter

Instructions

  • In a dessert bowl, add in the oats, raisins, chopped nuts, light brown sugar, ground cinnamon and ginger and give everything a good mix.
  • Grate the carrot and add it into the bowl.
  • Pour in the milk and stir everything together.
  • Pop the bowl into the microwave on high for 2 minutes (I used an 800W microwave)
  • Then take it out and give it a good stir then pop it back in the microwave for a further 2 minutes.
  • Take your oatmeal out of the microwave and dollop your peanut butter on top and let it stand for a further 30 seconds.
  • Eat immediately.

Notes

Make this dish easily gluten free by using gluten free certified oats.Make this dish vegan by using a plant based milk. Almond, coconut & soya will all work in this dish.
