Preheat your oven to 160C/325F/Gas mark 3 and line a large baking sheet with baking parchment or a silicone mat.
Measure out your oats and place them in a medium sized bowl.
In a smaller microwavable bowl add in the peanut butter, maple syrup, ground cinnamon and the vanilla extract, and microwave on high for 30 seconds.
Take it out of the microwave and stir to mix everything together and pour over your oats. Mix everything together so all of your oats have a coating.
Spread your oats out over your baking sheet in little clusters and pop them in your warm oven for 10 minutes.
After 10 minutes, stir your oats and place them back in the oven for a further 10 minutes.
Take them out of the oven and allow them to fully cool down, it will crisp up even more as it cools down.
Once cooled add in the freeze dried strawberries, sunflower seeds and chopped peanuts and stir it all together.
Kept in an airtight container at room temperature this granola will easily last for a month.
Serve with fresh strawberries for an even bigger strawberry hit.
