Gingerbread Coffee Syrup

I don't care if people think this is to seasonal, I love gingerbread at all times of the year ;)

  • 240 millilitres water 1 cup
  • 200 grams light brown sugar 1 cup lightly packed
  • 1 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground mace or nutmeg
  • 1 teaspoon molasses or black treacle


  • In a small pan over a medium heat, add all the ingredients in and stir until the sugar has dissolved. This will be about 4 to 5 minutes.
  • Then take it off the heat and allow it to sit for 5 minutes.
  • Pour the syrup into a clean sterilised jar or bottle, seal and use within one month.


The easiest way to sterilise your jars or bottles is to wash them in hot soapy water, rinse them clean them pop them in your oven for 10 minutes. Make sure your oven is on its lowest stetting!
