This months Peanut Butter Bash is a little different, because its the hight of summer people are super busy so its just me & Miranda this month mixing it up with Marshmallows. Any regular readers will know, that this last month I have been super busy with a breakfast campaign and that has left no time for other posts. So this months peanut butter bash post has been born out of that lack of time, for some reason I always seem to run out of time for these posts! But out of that has come some great dishes. I love cooking under pressure 😂 I was and still am that kid in college that left all their assignments till the last minute. And somehow still managed to get a good grade. God loves a trier and a blagger!

Last year when we mixed these two ingredients together I was really well organised and came up with one of the most popular posts ever on my blog, Peanut Butter and Marshmallow Ice Cream. If you love homemade ice cream then you have to try this recipe it is simply amazing! Even if I do say so myself….

The ingredients.
So let’s talk more in depth about this luxury peanut butter marshmallow toast shall we? First we have the bread, now if you are on a budget then use what bread you have on hand, please don’t go out and spend a fortune on an artisan bread. Good old sliced bread works well and will work, I promise you. But if like me you are a total foodie and a bit of a pig 😉 then go grab yourself some super tasty fruit bread. Hey it has raisins and Santana’s in it, it’s practically a health food!

Next you want the staples peanut butter. Smooth or crunchy it’s completely a personal thing and marshmallows. Pink or white it really doesn’t matter, now because I am a vegetarian I spend a fortune on vegetarian marshmallows. I really should just make my own, boy I wish I had time! So if you are a bona fide meat eater then gelatine won’t bother you 😥 Ewwww but if like me you prefer your gelling agents to come from plants then please use vegetarian marshmallows.

Next we have the supporting cast! Chocolate 😀 Please see the note above about being a foodie and a bit of a pig. Try and use a good chocolate here it really will make all the difference. Around 60 to 65% cocoa would be great although if good old Cadburys or Hershey’s is more your budget, or just personal preference they will be great too.

Next in in goes sliced banana because let’s face it I’m obsessed and use banana all the time. Always have been, always will be. Sliced strawberries are next to be added then the chopped up cherries and the surprise ingredient, fresh peppery basil. Trust me, add it in and you won’t regret it. Peppery flavours really do go well with super sweet ones and they help to cut through all that sweetness just a little bit. Luxury Peanut Butter Marshmallow Toastie
Ingredients
- 2 slices fruit bread
- 1 teaspoon butter
- 3 tablespoons peanut butter
- 8 small squares dark chocolate
- 6 large vegetarian marshmallows
- 1/3 rd banana sliced
- 2 strawberries sliced
- 2 cherries finely chopped
- 4 basil leaves
Instructions
- Warm up your hot plates, griddle, skillet or grill and lightly butter the bread on the outside of the slices.
- Spread your peanut butter evenly over the two slices and place the the chocolate on one side along with your marshmallows.
- Carefully arrange your fruit on the other slice and tare up your basil and sprinkle over the fruit and marshmallows.
- Carefully sandwich the two slices together and grill, place in a skillet or on your hot plates and cook until the marshmallows start to ooze out and the chocolate is all melty.
- Serve immediately.

Hi Ruth I buy my vegetarian / vegan marshmallows from a company called Freedom Mallows. They sell them in health food stores in the UK and on Amazon.co.uk as well.
