Honey Preserved Fruit

I wanted to have a chance to enjoy some of the currant seasonal fruits during the spring and even into summer. I love cranberries, kumquats and physalis in particular and they are only fresh at this time of year. So I decided to preserve some, but I didn’t want to use alcohol. I don’t have a problem with alcohol preserved fruits I just didn’t want to do it this time. After doing some research I discovered that long ago, families would use honey to preserve fruits for longevity. A few years ago I gave this a go to see if it would work and it...

Apple and Cranberry Pie

Some flavours are classic and timeless like orange and lemon, banana and caramel, cheese and onion the list goes on, one of my favourites especially this time of year when the ingredients are in season is apple and cranberry. Pie Pie is a great food; it can be enjoyed hot or cold, sweet or savoury. I love a good fruit pie fresh, sweet and actually not all that bad for you, especially the pies I make. I never have the pastry crust very thick and rarely do I put a full pie lid on. Pie lids As you can see from these images I haven’t given my pie...

Christmas Sweet Rolls

The #TwelveLoaves Challenge I found this challenge over at That Skinny Chick Can Bake. I am only sorry I didn’t find out about it earlier so I could have joined in sooner it’s all based around bread, yeast and quick bread. Recently I have developed a bit of an obsession with sweet rolls. I may have only put one recipe up on the blog so far (Pumpkin sweet rolls) but I have been experimenting with lots of different flavours and techniques. This time with the #TwelveLoaves challenge in mind, I wanted to create Christmas in a roll.   Jump to...

Salty Cinnamon Sugar Candied Nuts

We have all had that ‘Oh No’ moment and it tends to happen most at this time of the year! The other day after returning home from visiting family we noticed a hand delivered package on the doorstep. Further investigation revealed a lovely, very thoughtful and completely unexpected gift from a neighbour! Panic Stations! We had a couple of hours before they returned from work to sort something out. Michael aka: Mr Bake Then Eat rushed me to the kitchen and told me to create something worthy of a Christmas gift. We had very little in the house,...

Minty Candy Cane Cookies

A cool thing about the holiday periods is the unique candy that is available. Easter has its chocolate eggs, Halloween has its pumpkin candy and Christmas has candy canes.                   There are many ways to use candy canes in your baking, mostly you will see them crushed and sprinkled on top of tempting treats fudge, cookies, cupcakes and brownies. They make lovely topping because of their pretty colours and the added crunch they can give a baked good. Going down a different route Instead of using candy canes as a topping I wanted to...

Gluten Free Clementine Cake

I wanted to create a gluten free rich fruitcake that could be enjoyed by all my gluten intolerant friends real and virtual 😀 I ended up with an amazing rich, moist fruitcake that was bursting with bright citrus flavours and had a real festive feel to it. So instead of making a Christmas cake this year I’ve decided to make this amazing cake instead. It’s that good! Alternative Christmas cake I never thought a cake without flour could be this good. I love traditional Christmas cake, but my mum’s is always the best so instead of trying my...

Homemade Sweet Mincemeat

With Christmas fast approaching it’s time to get things organised and for me that means making my own sweet mincemeat. Don’t get me wrong it’s not hugely expensive to buy ready made but as always the homemade stuff is always better. You know what’s in the jar because you put it there and it always tastes better. Also as another point for me, I can make mine 100% vegetarian 😀 which is always a good thing. Traditionally mincemeat is made with beef suet… being a vegetarian for the best part of 30 years the very thought of this turns my...
